
Preparation Time: 20 mins | Cooking Time: 45 mins | Serves: 4 to 5
Ingredients:
- 5 - Eggs
- 10 - Onions
- 2 tsp - Cooking Oil
- 3 - Dried Red Chillies
- 1tsp - Cumin Seeds
- 1/4 - Coconut
- 1 cup coconut milk
- 1 pinch - turmeric
- Salt to taste
- A few curry leaves
- Chopped corriander leaves to garnish
Preparation:
- Boil the eggs, remove the shells and cut it into half
- Fine chop the onions
- Ground chillies, cumin seeds and coconut to a paste and mix it with coconut milk
Procedure:
- Heat the oil and fry the chopped onions and curry leaves until the onion smell goes
- Add the coconut milk mixed with spices, salt, turmeric and let it boil gently
- Once the oil is separated, add the eggs and sprinkle the coriander leaves.
Serve With:
Rice or Bread
Note:
You can also not boil the egg but just pour the raw egg into the curry and let it cook for another 3-5 minutes.
